น้ำบริสุทธิ์ ไม่มีความสามารถในการนำไฟฟ้า (Conductivity) แต่น้ำโดยส่วนใหญ่ที่เราพบในชีวิตประจำวันไม่ใช่น้ำบริสุทธิ์ เนื่องจากมีสารละลายต่างๆ เจือปนอยู่ สารละลายเหล่านี้เกิดจากการแตกตัวเป็นอนุภาคที่มีประจุไฟฟ้า โดยจะมีทั้งประจุบวก (+) และประจุลบ (-) ซึ่งประจุเหล่านี้เองที่ทำให้น้ำสามารถนำไฟฟ้าได้ ในการวัดสภาพการนำไฟฟ้าของน้ำ โดยใช้อุปกรณ์วัดสภาพการนำไฟฟ้าแบบมาตรฐาน

Conductivity หรือ การนำไฟฟ้า เป็นวิธีวัดความสามารถของน้ำในการส่งผ่านกระแสไฟฟ้าซึ่งเกิดจากมีอยู่ของสารประกอบอนินทรีย์ที่ละลายอยู่ในน้ำ เช่น แอนไอออนของคลอไรด์ไนเตรต ซัลเฟต และฟอสเฟต (แอนไอออนคือไอออนที่มีประจุลบ) หรือ แคทไอออนของโซเดียมแมกนีเซียม เหล็ก และอะลูมิเนียม

การตรวจวัดความเค็มของน้ำ (SALINITY) การตรวจวัดความเค็มของน้ำ (SALINITY) การตรวจวัดความเค็ม เป็นการตรวจวัดปริมาณเกลือที่ละลายน้ำที่พบในน้ำเค็มหรือน้ำกร่อย โดยมีหน่วยเป็นส่วนในหนึ่งพันส่วน (ppt ย่อมาจาก part per thousand) ความเค็มของน้ำทะเลของโลกมีค่าเฉลี่ย 35 ppt น้ำจืดมีค่าไม่เกิน 0.5 ppt น้ำกร่อยมีค่า 0.5 – 25 ppt ค่าความเค็มจะแตกต่างกันขึ้นอยู่กับปริมาณหยาดน้ำฟ้า น้ำจากหิมะละลาย

รสเค็มคืออะไร ? รสเค็ม คือ ธาตุโซเดียมในอาหารซึ่งมีหน้าที่ช่วยรักษาสมดุลของเหลวในร่างกาย ทำให้การทำงานของเส้นประสาทและกล้ามเนื้อเป็นปกติ โดยโซเดียมที่ร่างกายได้รับร้อยละ 90-95% มาจากอาหารที่บริโภค ทั้งพืช และ เนื้อสัตว์ รวมทั้งเครื่องปรุงรส(เค็ม) และอาหารที่มีส่วนประกอบของโซเดียม เช่น ผงชูรส, ผงปรุงรส, ผงฟู, เกลือ, น้ำปลา, ซีอิ๊ว, เต้าเจี้ยว, น้ำมันหอย, เครื่องปรุงรสต่างๆ เป็นต้น
